Yes, that’s my testimonial. I wouldn’t call it a diet because I eat as much as I like. This new lifestyle contributed to weight loss and improved my health. Energy level has increased, cholesterol and blood pressure are no more an issue and are within range.

My diet consists of fruit, vegetables, beans, nuts, and whole grains. I don’t eat anything processed or premade that comes out of a can, bag or box, only whole foods. I must say, it does require quite a bit of planning and prep time and have learned, it’s best to dedicate time to prep meals in advance.

I start my day with a green smoothie and would not trade in my Vitamix for anything. A pressure cooker comes in handy for making beans and rice to perfections while eliminating lectins.

Four years ago, when I transitioned to a plant-based diet, it was not in vogue. It’s great to see an increased focus on the benefits of a plant-based diet supported by research as it is gaining popularity not only as a health benefit but a sustainable solution to help reverse climate change.
